Yup. So other than that nothing.
Oh, did I tell you that all the goats have been bred? Our new guy did his job admirably. Once the ladies figured out his talent, they wouldn’t leave him along. We’ll give them a few more days together and then it is off to the high country (aka the far field). Absence makes the heart grow fonder. Next year will be rockus.
And did I ever mention how someone dropped off a rooster in the night? He’s a beautiful thing, but he’s started attacking us. He got Xavier on the leg yesterday and this morning the brute went after me. I taught him a lesson with a bucket up against a fence. I’m happy to say that this evening he still remembered me--he turned tail and ran, the chicken.
I made cannolis tonight. For samples at farmers market tomorrow. I’ve been having a hard time getting people to understand that ricotta is more than just for lasagna. So I went ahead and made mini-cannolis to get people addicted. There, I said it.
So nothing to report whatsoever. Boring life on the farm. :)
Here is the recipe I used. It is something I altered from online and made it simple.
Cannoli di Ricotta:
1 ½ c flour
¼ t cinnamon
1 t sugar
1 t unsweetened cocoa
1 T butter
3 T Marsala (I used grape juice because that is all I had)
2 quarts canola oil, for frying
1 pound goat ricotta ($5.00/lb)
½ c sugar
1 T vanilla
Zest from one orange
¼ c mini chocolate chips (optional)
Powdered sugar for dusting
Combine flour, cinnamon, sugar and cocoa. Cut in 2 T butter to resemble coarse crumbs. Add Marsala. Shape dough into ball, wrap and refridgerate until ready to use.
Heat oil to 350.
In bowl, stir together ricotta, sugar, vanilla, orange zest and choclate chips. Mix well. Spoon into baggie, cut off tip for piping. Refridgerate.
Divide dough into 4 pieces. Roll out to 1/16”-thickness. Cut with cookie cutter, roll more to make into oval, not circle. Wrap around metal form, seal edges with egg whites (well mixed and water added if needed). Drop into hot oil. Turn to keep from burining. Pull out when done and drain on paper towels. Once cooled, twist off metal rod. Shells may be made 1 day in advance.
Pipe filling into the cannolis and then sprinkles posered sugar on top. Enjoy.
